Lemon and Coconut Slice with Aniseed Myrtle
Ingredients
- 250gm Marie biscuits
- 125gm butter melted
- 3/4 cup desiccated coconut
- 200gm condensed milk
- icing sugar
- 5gm aniseed myrtle
- lemon juice
Directions
- Crush Marie biscuits to a coarse crumb.
- Combine with condensed milk, aniseed myrtle, desiccated coconut, and melted butter. Mix well.
- Line a cake or rectangular tin with baking paper.
- Press the biscuit mixture firmly into the base. Chill for 30 minutes.
- 2 cups icing sugar
- 1 1/2 tbsp melted butter
- 1/3 cup lemon juice
- Prepare icing to a thick, spreadable consistency,adjusting lemon juice to taste.
- Spread icing over chilled base. Return to fridge to set.
- Once set, portion into squares or rectangles.
