Lemon and Coconut Slice with Aniseed Myrtle

Ingredients

  • 250gm Marie biscuits
  • 125gm butter melted
  • 3/4 cup desiccated coconut
  • 200gm condensed milk
  • icing sugar
  • 5gm aniseed myrtle
  • lemon juice

Directions

  • Crush Marie biscuits to a coarse crumb.
  • Combine with condensed milk, aniseed myrtle, desiccated coconut, and melted butter. Mix well.
  • Line a cake or rectangular tin with baking paper.
  • Press the biscuit mixture firmly into the base. Chill for 30 minutes.
  • 2 cups icing sugar
  • 1 1/2 tbsp melted butter
  • 1/3 cup lemon juice
  • Prepare icing to a thick, spreadable consistency,adjusting lemon juice to taste.
  • Spread icing over chilled base. Return to fridge to set.
  • Once set, portion into squares or rectangles.
